The way you store cheese has a huge effect on how well it eats when it reaches the table.  Follow these simple steps to enjoy your cheese at its best:

  • Serve at room temperature. This allows the natural fats in the cheese to soften, intensifying their flavour. It also explains why softened butter tastes so much better than butter straight from the fridge.

  • Once you've taken it out of the fridge, cover the cheese with a clean, damp tea towel. This ensures that the cheese does not dry out before serving.

  • Wrap cut cheese in waxed paper. Cling film causes cheese to 'sweat' - or “perspire” if it is posh cheese...
